The Wine Creche operates as a premium contract winery and start-up wine brand incubator based in Melbourne, while also offering mobile/remote services for wineries and vineyards across the state. We offer a range of contract winemaking, vineyard management, consultancy, wine filtration, product development, certification management and product evaluation/analysis services to the Victorian wine industry. Our contract and custom crush/consultative winemaking operation is home to some of Victoria's most exciting small wine brands and budding winemakers.
Mark Matthews has been making wine since 1997 and has worked over 31 vintages across Australia, France, New Zealand and the United States and since founding The Wine Creche in the mid-2000’s has made over 500 commercial wines across almost all wine categories.

Mark Matthews has been making wine since 1997 and has worked over 31 vintages across Australia, France, New Zealand and the United States and since founding The Wine Creche in the mid-2000’s has made over 500 commercial wines across almost all wine categories.
During that time Mark has lectured to cohorts from NMIT, Melbourne Polytechnic and Latrobe University. In the viticulture field, he has a strong passion for organics and integration of biodiversity in grape growing and has worked with native grasses, fire stick farming practices and robotics across a range of landscapes to enhance viticultural and biodiversity outcomes.
He has extensive consulting experiences with clients across boutique, corporate, union and government sectors. Research interests and partnerships in winemaking have included CO2 and aroma capture (Dr Alastair Reed), Accentuated Cut Edge (Dr Richard Smart), Vessel development and permeability (Tony Flecknoe-Brown).
Jack has worked for The Wine Crèche since 2023 as a vineyard manager, winemaker and filtration specialist.
He is also a co-founder and winemaker of Dack Wines, Victorian Wine Show Scholarship recipient (2024) and is currently conducting research on the effects on wine quality of concentration by Reverse Osmosis.
